- 1 can crushed pineapple, drained
- 1/2 c. pineapple juice
- 1 (8 oz.) pkg. cream cheese
- 2 Tbsp. sugar
- 1 c. coconut
- 1/2 tsp. almond extract
- 1 (8 oz.) container Cool Whip
- 1 (9-inch) graham cracker crust
Directions

1Put pineapple juice, cream cheese, sugar, coconut and extract in blender.

2Cover and process until well mixed.

3Remove to bowl and add pineapple.

4Mix well.

5Fold in Cool Whip.

6Spoon into prepared crust.

7Pour into 9 x 13-inch baking pan (ungreased). Bake at 350° for 30 minutes or until cake springs back when lightly touched with finger.

8Cool in pan.
