Ingredients

  • 2 1/4 c. flour
  • 1/4 c. sugar
  • 1 Tbsp. baking powder
  • 1/3 c. plus 2 tsp. oleo
  • 1 1/2 c. crushed pineapple (no sugar added)
  • 1 tsp. vanilla
  • 1/2 tsp. coconut flavoring

    Preheat oven to 375°.

    In medium mixing bowl, combine flour, sugar and baking powder.

    Cut in oleo with pastry blender or 2 knives until mixture resembles coarse meal.

    Add remaining ingredients and stir just until mixture forms a sticky dough and leaves sides of the bowl (do not overmix).

    Spray 12 muffin pan cups (2 1/2 inches) with nonstick cooking spray.

    Spoon an equal amount of pineapple mixture into each cup.

    Bake until muffins are golden brown, 30 to 35 minutes.

    Remove muffins to a wire rack and let cool.

    Serve immediately or wrap individually and freeze until ready to use.
