Ingredients
- 2 1/4 c. flour
- 1/4 c. sugar
- 1 Tbsp. baking powder
- 1/3 c. plus 2 tsp. oleo
- 1 1/2 c. crushed pineapple (no sugar added)
- 1 tsp. vanilla
- 1/2 tsp. coconut flavoring
Directions

1Preheat oven to 375°.

2In medium mixing bowl, combine flour, sugar and baking powder.

3Cut in oleo with pastry blender or 2 knives until mixture resembles coarse meal.

4Add remaining ingredients and stir just until mixture forms a sticky dough and leaves sides of the bowl (do not overmix).

5Spray 12 muffin pan cups (2 1/2 inches) with nonstick cooking spray.

6Spoon an equal amount of pineapple mixture into each cup.

7Bake until muffins are golden brown, 30 to 35 minutes.

8Remove muffins to a wire rack and let cool.

9Serve immediately or wrap individually and freeze until ready to use.
