Tropical Pineapple Cake

- 1 (425 g) can pineapple chunks, drained
- 1 1/2 cups self raising flour
- 1/2 cup sugar
- 2 eggs
- 1/2 cup sour cream
- 100 g butter, melted
Directions

1Preheat oven to 180 degrees celcius.

2Grease a 20x30cm slab tin.

3Combine all ingredients except pineapple into a large bowl and beat until smooth.

4Add well drained pineapple (very important) and stir through.

5Pour into prepared tin.

6Bake for 20 minutes.

7Cool and serve from the tin.

8Dust with icing sugar to serve or a simple lemon icing.
