  • 2 c. nonfat milk
  • 2 Tbsp. cornstarch
  • 1/3 c. sugar
  • 4 egg whites, lightly beaten
  • 2 tsp. canola oil
  • 1 1/2 tsp. vanilla extract
  • 1 tsp. coconut extract
  • 8 oz. angel food cake, cut into cubes
  • 1/4 c. dark rum
  • 1 (20 oz.) can pineapple chunks in natural juice, drained
  • 3 large mangos, peeled and diced (about 3 c.)

Directions

    Combine milk and cornstarch in a saucepan; mix until cornstarch is completely dissolved.

    Add sugar, egg whites and oil; mix well.

    Bring to a boil over medium-low heat.
