- 1/2 c. all-purpose flour
- salt
- freshly ground pepper to taste
- 4 whole brown or rainbow trout, cleaned and dressed
- 4 Tbsp. unsalted butter
- 1/2 c. roughly chopped hazelnuts
- 2 Tbsp. minced parsley
- 1 lemon, cut in wedges
Directions

1Heat oven to 350°.

2Generously season the flour with salt and pepper; coat the trout with the mixture.

3Melt 2 tablespoons of the butter in a shallow, flameproof roasting pan.

4Add the fish and cook over high heat for 1 minute on each side.

5Transfer to the heated oven and cook just until fish is cooked all the way through, 20 to 25 minutes.
