- 4 to 5 c. cooked rice
- 4 eggs
- 3 Tbsp. vegetable oil
- 2 Tbsp. chopped onions
- 1 tsp. salt
- 1/2 tsp. sugar
- 1 Tbsp. soy sauce
- dash of pepper
- 1/4 c. chicken broth
Directions

1Heat 1 tablespoon of oil in frying pan or wok on high heat. Scramble eggs quickly and remove.

2Heat 2 tablespoons of oil in same pan or wok.

3Add eggs, rice, salt, sugar, soy sauce and broth.

4Stir fry over medium heat for 3 to 4 minutes.
