  • 2 boiled potatoes
  • 1 11/16 cups tuna in oil canned, drained
  • 6 3/8 tablespoons Parmesan cheese grated
  • 1 egg
  • 1 teaspoon pesto
  • 1 teaspoon chives minced
  • 2 tablespoons breadcrumbs
  • vegetable oil
  • almond
  • liver pate

Directions

    In a bowl, mash the potatoes. Add the tuna and mix well.

    Add the egg, cheese, breadcrumbs, pesto, chives and mix together until a dough forms.

    Cover the bowl with plastic wrap and place in the refrigerator.

    Remove from the refrigerator. With floured hands, shape into small balls the size of a walnut and coat in breadcrumbs.

    Heat a little oil in a frying pan on high heat. Fry the tuna balls until golden brown.

    Drain on kitchen paper and serve on a spoonful of almond and artichoke pate.
