Tuna Brown Rice

Ingredients

  • 2- 1/2 cups Brown Rice, Cooked
  • 18 cups Butter
  • 13 cups Onion, Diced
  • 2 stalks Celery, Diced
  • 1 cup Mushrooms, Sliced
  • 1 whole Medium Green Pepper, Julienned
  • 1/4 cups Peanuts
  • 1 teaspoon Salt
  • 1/4 teaspoons Pepper
  • 1/4 teaspoons Thyme (dried) (I Use Half The Amount As The Husband Doesn't Like Thyme)
  • 1 Tablespoon Soy Sauce
  • 2 cans Tuna (6 Oz. Each)

Directions

    Cook rice and set aside (I generally use Minute Rice as it is quick and easy).

    In a skillet over medium heat, melt butter.

    Add onions and saute until translucent.
  4. 4
    Then add the remaining vegetables (celery, mushrooms, green pepper) and peanuts and saute until crisp tender (about 5 minutes).

    Add salt, pepper, thyme and soy sauce.

    Mix well.

    Stir in tuna and cooked rice.

    Mix well and heat until cooked through.
