- 2 (6 oz.) cans tuna
- 2 Tbsp. margarine
- 3 Tbsp. flour
- 3/4 c. milk
- 1 tsp. vinegar
- salt and pepper to taste
- 1 egg
- 1 1/4 c. crumbled potato chips
Directions

1Drain

2fish and flake coarsely.

4blend in flour and gradually stir in milk.

5Cook, while stirring, until sauce boils

6and thickens.

7Add fish, vinegar and seasonings. Cool. Shape

8into 6 to 8 croquettes.

9Dip in beaten egg, then in potato chip

11Fry

12in deep fat heated to 365° to a golden brown, about 5 minutes.
