Ingredients
- 1 (7 oz.) can tuna
- 2 Tbsp. oil
- 4 Tbsp. flour
- 1/2 c. milk
- 2 Tbsp. chopped parsley or green pepper
- 1 Tbsp. lemon juice
- 1 slightly beaten egg
- 1 tsp. salt
- 1/4 tsp. white pepper
- 1 1/2 c. soft white bread crumbs
Directions

1Separate tuna into flakes.

2Put oil in saucepan.

3Add flour and blend.

4Add milk and cook until very thick, stirring constantly.

5Remove from heat.

6Add tuna and remaining ingredients; mix well.

7Form mixture into cutlets or patties. Refrigerate about 2 hours.

8Dip cutlets into slightly beaten egg and roll in cracker crumbs.

9Fry in hot oil until golden brown. Garnish with halved cherry tomatoes or tomato slices and lemon wedges.

10Serve with fish sauce, if desired.
