  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 4 garlic cloves, minced
  • 12 teaspoon dried Italian seasoning
  • 14 teaspoon hot pepper flakes
  • 10 ounces frozen spinach, thawed, squeezed dry and chopped
  • 28 ounces stewed tomatoes
  • 14 cup oil-cured olives, pitted and chopped
  • 2 tablespoons capers, rinsed and drained
  • 15 ounces tuna, drained and broken into chunks
  • 12 ounces spaghetti
  • parmesan cheese, grated (optional)

Directions

    In a large skillet, heat the oil over medium heat.

    Cook the onion, garlic, Italian seasoning and hot pepper flakes for 5 minutes or until softened.

    Add the spinach and tomatoes, breaking up the tomatoes with the back of a spoon.

    Add the olives and capers and bring to a boil.

    Reduce the heat and simmer for about 10 minutes or until thickened.

    Stir in the tuna.

    Meanwhile, in a large pot of boiling salted water, cook the pasta for 8 to 10 minutes or until tender but firm.

    Drain and return to the pot.

    Add the sauce and toss to coat.

    Serve sprinkled with cheese (if using).
