Tuna-Macaroni Bake

  • 1 1/2 c. macaroni
  • 2 Tbsp. margarine
  • 2 Tbsp. flour
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1 egg, lightly beaten
  • 1/2 c. chopped onion (optional)
  • 2 c. milk
  • 3/4 c. Parmesan cheese
  • 6.5 to 7 oz. can tuna, drained
  • 2 tomatoes, sliced (optional)
  • 6 oz. pkg. Mozzarella cheese

Directions

    Cook macaroni, drain and set aside.

    Combine the next 7 ingredients together in a saucepan and cook over low heat until sauce thickens, stirring constantly.

    Add 1/2 cup Parmesan cheese, tuna and macaroni.

    In an ungreased 2-quart casserole dish, layer 1/2 the macaroni mixture, 1/2 the Mozzarella and 1/2 the tomato slices.

    Repeat layers.

    Sprinkle remaining 1/4 cup Parmesan cheese on top.

    Bake at 350° for 30 to 40 minutes.

    Serves 6 to 8. The tomato/cheese topping is very pretty.
