Tuna Mound Recipe

Ingredients

  • 1 c. butter, softened
  • 1 (8 ounce.) pkg. cream cheese, softened
  • 2 (7 ounce.) cans tuna, liquid removed & flaked
  • 2 tbsp. minced green onion
  • 1 tbsp. lemon juice
  • 1/4 teaspoon dry whole tarragon, crushed
  • 1/4 teaspoon salt
  • Dash of pepper
  • Leaf lettuce
  • 1 hard-boiled egg
  • 1/4 c. fresh chopped parsley

Directions

    Cream butter and cream cheese till fluffy.

    Add in tuna, onion, lemon juice, tarragon, salt and pepper.

    Beat at medium speed of electric mixer till thoroughly mixed.

    Chill.

    Shape tuna mix into a mound on lettuce lined serving plate.

    Press egg through a sieve.

    Garnish tuna mound with egg and parsley.

    Serve with crackers or possibly party rye bread.
