Tuna Quiche

  • 9 eggs
  • 1 1/2 c. half and half
  • 1 tsp. horseradish
  • 1 Tbsp. lemon juice
  • 1/2 tsp. salt
  • 1/2 tsp. basil
  • 2 (12 oz.) cans tuna, drained
  • 1 (10 oz.) pkg. frozen peas, thawed
  • 1 (8 oz.) can water chestnuts, drained and chopped
  • 1/3 c. sliced green onion
  • 1 1/2 c. shredded Jack and Cheddar cheese

    Beat eggs.

    Add half and half.

    Mix in horseradish, lemon juice, salt and basil.

    Stir in tuna, peas, water chestnuts, green onion, Jack cheese and 1 cup Cheddar.

    Pour mixture into greased 10 x 15-inch jelly roll pan.

    Top with remaining Cheddar.

    Bake at 375° for 25 to 30 minutes or until knife comes clean.
