  • 1 pie crust mix for 1 (9-inch) pie crust
  • butter or margarine
  • 1 medium onion, diced
  • 1 small green pepper, diced (optional)
  • 1 (6 1/2 to 7 oz.) can tuna, drained and coarsely flaked
  • 4 eggs
  • 1 c. half and half
  • 1/2 tsp. salt

    About 1 1/2 hours before serving, prepare pie crust mix as label directs.

    Use to line a 9-inch pie plate.

    Spread crust with 1 tablespoon softened butter or margarine.

    Preheat oven to 425°. In a 2-quart saucepan over medium heat, put 3 tablespoons hot butter or margarine; cook onion and pepper until tender, stirring occasionally.

    Remove pan from heat; stir in tuna.

    Spoon tuna mixture into prepared pie crust.
