Tuna-Rice Balls

Ingredients

  • 1 can tuna, drained and flaked
  • 1/4 c. chopped onion
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 c. Minute rice, uncooked
  • 1 (10 1/2 oz.) can tomato soup
  • 1 1/2 c. water
  • 1 tsp. sugar
  • 2 eggs, slightly beaten

    In bowl, combine first 6 ingredients.

    Blend soup, water and sugar in skillet.

    Mix 2 tablespoons into rice mixture along with eggs.

    Press into twenty 1-inch balls.

    Bring soup mixture to boil. Add rice balls.

    Reduce heat.

    Cover and simmer 15 minutes, basting occasionally.
