Ingredients
- 2 cans (7 oz.) tuna
- 1/4 c. chopped onion
- 2 c. drained cooked green beans (1 lb. can)
- 2 1/4 c. water
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 (10 1/2 oz.) can condensed cream of tomato soup
- 1 1/3 c. Minute rice
- 2 Tbsp. chopped parsley
Directions

1Drain tuna, measuring 2 tablespoons of oil into a large skillet.

2Saute onion in oil until tender.

3Remove skillet from heat.

4Add beans, water, seasonings and soup.

5Break up tuna and add to skillet mixture.

6Bring quickly to a boil, then stir in long-grain rice from the box.

7Cover, reduce heat and simmer 8 to 10 minutes or until most of liquid is absorbed, stirring occasionally.

8Serves 4 to 6.
