Tuna-Tofu Spread

Ingredients

  • 1 (10 1/2 oz.) pkg. soft tofu (We like Kikkoman brand best), drained
  • 1/4 c. fat-free, cholesterol-free mayonnaise
  • 1/2 tsp. salt
  • dash of pepper
  • 1 (6 1/2 oz.) can tuna
  • 1/4 c. finely chopped celery
  • less than 1 Tbsp. minced onion
  • 2 Tbsp. chopped pickles

Directions

    Put the first 4 ingredients into a blender; mix on low speed until smooth, then set aside.

    Drain the can of tuna.

    Mix in chopped celery, minced onion and pickles.

    Stir in tofu mixture; mix well.

    Cover; refrigerate several hours to blend the mixture. Stir thoroughly before spreading on bread slices.
