- 4 (4 oz.) flounder fillets
- salt and pepper
- 8 medium chopped shrimp
- 4 Tbsp. backfin crabmeat
- 2 scallions, chopped
- 3 or 4 Tbsp. grated Mozzarella cheese
- melted butter
- Hollandaise Sauce
- paprika
Directions

1Sprinkle fillets with salt and pepper.

2Set aside.

3Mix shrimp, crabmeat, scallions and cheese and spread on fillets.

4Roll fillets into a turban and secure with wooden picks.

5Place turbans on end in a well-greased baking dish.

6Brush generously with melted butter.

7Bake at 350° for 15 to 20 minutes or until fish flakes easily when tested with a fork.

8Remove from oven and drain off all liquid.

9Top the seafood with your favorite Hollandaise Sauce and sprinkle with paprika.
