  • 4 (4 oz.) flounder fillets
  • salt and pepper
  • 8 medium chopped shrimp
  • 4 Tbsp. backfin crabmeat
  • 2 scallions, chopped
  • 3 or 4 Tbsp. grated Mozzarella cheese
  • melted butter
  • Hollandaise Sauce
  • paprika

    Sprinkle fillets with salt and pepper.

    Set aside.

    Mix shrimp, crabmeat, scallions and cheese and spread on fillets.

    Roll fillets into a turban and secure with wooden picks.

    Place turbans on end in a well-greased baking dish.

    Brush generously with melted butter.

    Bake at 350° for 15 to 20 minutes or until fish flakes easily when tested with a fork.

    Remove from oven and drain off all liquid.

    Top the seafood with your favorite Hollandaise Sauce and sprinkle with paprika.
