- 1 cup brown sugar
- 1 cup table salt
- 1 gallon water
Directions

1For a 12 lb turkey --

2Mix all ingredients and stir till salt and sugar are disolved.

3Wash off the turkey with cold water and pat dry.

4Soak in a plastic container overnight or as long as you can.

5We soaked about 10 hours.

6Put a plate on top of turkey to keep it covered in brine.

7Next morning rinse turkey real well.

8Cook on your smoker as per manufacturer instructions.

9(We smoked our 12 lb turkey for 5 and 1/2 hours after the temperature reached 220F).

10(We used mesquite wood chuncks).
