- 1/2 c. butter
- 2 c. sliced onions
- 4 c. cubed turkey
- 1 (No. 2) can pineapple tidbits (save juice)
- 2 Tbsp. vinegar
- 2 Tbsp. cornstarch
- 2 Tbsp. water chestnut juice
- 4 tomatoes
- 1 (8 oz.) can water chestnuts
- 1/2 tsp. salt
- 4 c. cooked rice
Directions

1Saute onion in butter; add turkey.

2Add pineapple juice and vinegar and simmer 10 minutes.

3Blend cornstarch and water chestnut juice.

4Pour into skillet and cook until thick.

5Add pineapple tidbits, tomatoes, water chestnuts and salt; simmer. Serve over rice.

6Serves 8.
