  • 1 tablespoon vegetable oil
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 green bell pepper, cut in 1/2 inch squares
  • 1 red bell pepper, cut in 1/2 inch squares
  • 2 teaspoons chili powder
  • 34 teaspoon oregano
  • 34 teaspoon ground cumin
  • 34 teaspoon ground coriander
  • 1 lb ground turkey
  • 1 (14 ounce) can chopped tomatoes
  • 1 (8 ounce) can tomato sauce
  • 2 tablespoons tomato paste
  • 12 teaspoon salt
  • 14 teaspoon black pepper
  • 1 (15 ounce) can red kidney beans, drained and rinsed

Directions

    In a flameproof casserole, heat the oil over moderate heat.

    Add the onion and garlic and saute for 5 minutes or until the onion is soft.

    Add the bell peppers and saute for 5 minutes or until soft.

    Stir in the chili powder, oregano, cumin, and coriander and cook for 1 minute.

    Add the ground turkey and saute for 3 minutes or until no longer pink.

    Add the tomatoes, salt and black pepper and bring to a simmer.

    Add the beans and cook for 3 minutes or until heated through.
