Turkey Chili

Ingredients

  • 1 medium onion, chopped
  • 1/2 c. chopped green pepper
  • 2 Tbsp. vegetable oil
  • 2 c. cooked and diced turkey
  • 1 (20 oz.) can red kidney beans
  • 2 c. canned or fresh tomatoes, chopped
  • 2 tsp. chili powder
  • 2 c. water or beef broth
  • salt and pepper to taste
  • cooked rice

Directions

    Saute onion and green pepper in oil until tender.

    Stir in remaining ingredients except rice.

    Heat to boiling.

    Reduce heat and simmer for 15 minutes, stirring occasionally.

    Serve over rice. Serves 6.
