  • 5 Tbsp. butter
  • 1 Tbsp. chopped onion
  • 2 Tbsp. chopped green pepper
  • 1/2 c. flour
  • 1 c. chicken or turkey broth
  • 1/2 c. milk
  • 4 c. chopped chicken or turkey
  • 3 c. soft bread crumbs
  • salt

Directions

    Melt butter in saucepan; add onion and pepper. Cook over medium heat until tender, but not brown. Remove from heat; add flour and stir until smooth. Gradually add broth and milk, stirring as added. Cook over medium heat until thick, stirring constantly. Mix sauce, bread crumbs and turkey. Season to taste with salt. Press mixture into a well-greased 9 x 5 x 3-inch loaf pan. Bake at 350° for 1 to 1 1/2 hours or until loaf has browned evenly. When done, turn onto hot platter. Serve hot or cold with or without sauce.
