Ingredients

  • 2 or 3 plum tomatoes, chopped in bite size pieces
  • 1/2 large yellow onion, chopped
  • handful fresh cilantro, sliced fine
  • handful fresh parsley, sliced fine
  • 1/2 c. vinaigrette dressing
  • 1 lb. ground turkey
  • 1 tsp. cumin
  • 1 clove garlic, minced
  • 1 c. grated Parmesan cheese

Directions

    Mix first 5 ingredients together, let marinate overnight. Brown meat, drain off fat.

    Add cumin and garlic.

    Stir in cheese just before serving (hot or cold).

    Cut 8 pita pockets in half. Put equal amount of each mixture.
