- 3 eggs
- 3 cups potatoes, shredded and peeled
- 1 1/2 cups finely chopped cooked turkey
- 1/4 cup sliced green onion (optional)
- 2 tablespoons all-purpose flour
- 1 1/2 teaspoons salt
- vegetable oil
Directions

1Beat eggs.

2Stir in potatoes, turkey, onions, flour and salt.

3Mix well.

4Heat about 1/4 inch of oil in a large skillet.

5Measure mixture by 1/3 cupfuls and put in hot oil.

6Flatten a bit (carefully!).

7Fry approximately 5 minutes on each side until potatoes are tender and cakes are golden brown on both sides.
