Turkey Rice Bake

  • 1 can cream of mushroom soup
  • 1/2 c. milk
  • 1 1/2 tsp. dried thyme, crumbled
  • 1/2 tsp. lemon juice
  • 1/4 tsp. pepper
  • 2 c. diced, cooked turkey
  • 2 c. brown or white cooked rice
  • 1 (10 oz.) pkg. frozen broccoli spears, thawed and drained
  • 2 tsp. oleo
  • 1/4 c. seasoned dry bread crumbs
  • 1 Tbsp. Parmesan cheese

    Preheat oven to 350°.

    Combine soup, milk, thyme, lemon juice and pepper in a large mixing bowl; set aside 1/2 cup of mixture. Add turkey and rice to mixture in bowl and toss well to mix. Lightly coat an 8 x 8 x 2-inch pan with cooking spray.

    Spoon turkey mixture into the dish.

    Arrange the broccoli on top.

    Pour the reserved 1/2 cup of soup mixture evenly over all.
