  • 2 1/4 c. instant brown rice (uncooked)
  • 2 c. diced oven roasted turkey breast
  • 1/2 c. chopped green pepper
  • 1/2 c. chopped celery
  • 1/2 c. chopped red pepper
  • 2 Tbsp. chopped parsley
  • 2/3 c. honey Dijon fat-free dressing

Directions

    Prepare rice as directed on package, omitting margarine and salt.

    Mix rice, turkey, celery, peppers and parsley in a large bowl.

    Add dressing; mix lightly.

    Serve warm or refrigerate until ready to serve.
