  • 1 turkey carcass and dripping
  • 6 TJ turkey stock
  • 1 chix stock
  • 3 leek green part or whole
  • 3 lg onions 1/4'd
  • 6 unpeeled carrots
  • 8 leafy unpeeled celery 1/3's
  • 8 garlic cloves
  • 1 bunch fresh dill
  • 1 bunch fresh parsley
  • 1 tablespoon whole peppercorns
  • 2 tablespoons salt
  • 2 onions-chp
  • 5 lg diced carrots
  • 2 cups rinsed pearl barley
  • 6 diced celery
  • 5 cups chp leftover turkey
  • 1 tablespoon better than boulion

    1. put turkey carcass,dripping and next 11 ingredients in lg soup pot.

    2. add water to cover--season w/ better than boulion if needed

    3. bring to boil--then lower & simmer for 3 hrs--uncovered--cover if needed

    4.take out bones and vegtables--drain soup into another pot

    5. add barley, chp onions, carrots, & celery--bring to boil

    6. lower heat and ck about 45 min till barley and vegs are ckd
