- 1 onion, quartered
- 2 garlic cloves, crushed
- 2 celery ribs, chopped

- 12 teaspoon thyme
- 12 teaspoon salt
- 14 teaspoon pepper

1In large stockpot, bring all ingredients to a boil, reduce heat to medium-low and simmer for 3 to 4 hours.
