- 2/3 cup minute rice
- 1/4 cup butter (or margarine)
- 1 can tomato soup
- 1 can diced tomatoes
- 1 cup cooked small (or salad) shrimp
- 1/2 medium onion, chopped fine
- dash cayenne pepper
- 1/4 cup mayonnaise (or salad dressing)
- paprika
Directions

1Cook rice.

2Melt butter or margarine.

3Add onion and rice. Cook for 5 minutes.

4Add tomato soup and diced tomatoes, shrimp, pepper and paprika.

5Cook 10 minutes over medium heat.

6Add a dash of cayenne pepper (to taste).

7Fold in mayonnaise or salad dressing just before serving. Makes about 4 servings. Serve hot with a green salad and hot biscuits.
