Ingredients

  • 1 onion, cut in half and sliced
  • 1/2 cup extra-virgin olive oil
  • 2 medium waxy new potatoes, peeled and quartered
  • 1 medium celeriac, peeled and cubed
  • 1 large carrot, scraped and sliced
  • 5 scallions, chopped
  • 24 large cloves garlic, or more
  • Salt and pepper
  • 1 teaspoon sugar
  • A 1-pound can white haricot beans, drained
  • 3 tablespoons finely chopped parsley

Directions

    In a large pan, fry the onion in half the oil until golden.

    Add the other vegetables and the garlic, and barely cover with water.

    Add salt and pepper and the sugar and bring to the boil.

    Simmer until all the vegetables are well cooked and the liquid is reduced to a sauce.

    Add the beans and the remaining oil and cook a few minutes more.

    Serve hot, garnished with chopped parsley.
