Turnip Greens

- 2 large bunches turnip greens
- 1/2 lb. lean salt pork
- 4 Tbsp. Crisco or Crisco oil or lard
Directions

1Wash greens well to remove dirt; rinse at least 3 times in an abundance of water.

2Put small leaves in pot and strip larger leaves from stems.

3Before adding to pot container, put in 1 quart of cold water; cut salt pork into strips about one-inch thick and drop into pot.

4Add Crisco or lard.

5Cover pot and bring to a boil. Periodically stir greens in pot so as to allow those on top to go to the bottom.

6Then push down so leaves are covered with water.

7Lower heat and boil slowly for 2 hours (the longer the better), adding water to keep greens covered.

8Actual cooking time depends on tenderness of greens.

9Juice from greens is good served over cornbread and with pepper sauce on them.
