Turnip Pudding Recipe

  • 8 med. white turnips, peeled & sliced
  • 2 tbsp. onion, minced
  • 1/2 c. skim lowfat milk
  • Vegetable salt to taste
  • 2 egg whites, beaten stiff

Directions

    Cook turnips and onion in steamer till just tender.

    Drain, mash or possibly whip thoroughly in blender or possibly food processor.

    Heat lowfat milk, add in turnips and cook till lowfat milk is absorbed.

    Cold.

    Season and fold into the stiffly beaten egg whites.

    Pour into lightly buttered casserole and bake at 350 degrees till puffy and lightly browned.
