- 3/4 cup (75 g) graham cracker crumbs
- 3/4 cup (82 g) finely chopped pecans
- 1/4 cup (50 g) sugar
- 1/3 cup (75 g) butter, melted
- 3 ounces (84 g) unsweetened chocolate, chopped
- 2 tablespoons (30 mL) butter
- 1/2 of 8-ounce (224-g) package cream cheese, softened
- 1 cup (115 g) powdered sugar
- 1 teaspoon (5 mL) vanilla
- 1 cup (236 mL) whipping cream
- Pecan Halves
- Caramel Sauce
Directions

1Heat oven to 375F (190C) with oven rack in middle.

2To Make the Crust:

3Combine graham cracker crumbs, pecans, and sugar in medium bowl.

4Add melted butter and mix well.

5Spoon crust into 9-inch (5-cm) pie pan.

6Using your fingers, press crumbs evenly into bottom and up sides of pie pan.

7Press along edge between bottom and side of pan so crust wont be too thick.

8Bake 8 to 10 minutes until lightly browned and crust gives a little when touched lightly.

9Cool completely on wire cooling rack.

10This usually takes about 1 hour.

11To Make the Filling:

12Place chocolate and butter in a medium bowl set over, not in, simmering water until chocolate melts; or use a double boiler.

13Remove from heat.

14The last little lumps will melt as the mixture sits.

15Cool to room temperature.

16Reserve.

17Beat cream cheese in bowl of a heavy-duty mixer on Medium speed until soft and creamy.

18Scrape down sides of bowl, and add powdered sugar and vanilla.

19Continue beating on High speed until smooth.

20Gradually add whipping cream and continue beating until soft peaks form.

21Scrape down sides of bowl.

22Reduce mixer to Low speed and slowly beat in the melted chocolate.

23Continue beating until mixture stiffens slightly.

24Spoon filling into cooled crust.

25Smooth top and garnish with pecan halves.

26Chill several hours or freeze until serving.

27Spoon a little caramel sauce onto serving places and top with pie.

28Bakers Note: If the pie is frozen, remove it from the freezer and plate it in refrigerator for several hours before serving.

29It can be cut and served while frozen, but I prefer to serve it with the filling softened.

30Secret to success: Toast the pecan halves by placing in a 350F (180C) oven for 8 to 10 minutes.

31Cool before placing on the pie.
