  • 3 (15 ounce) cans cannellini beans
  • 1 cup vegetable broth
  • 12 cup chopped onion
  • 12 cup chopped red bell pepper
  • 2 teaspoons minced garlic
  • 1 teaspoon dried sage
  • 1 teaspoon dried rosemary
  • 2 -3 teaspoons lemon zest
  • 6 sun-dried tomatoes, softened and sliced (not in oil)
  • salt and pepper
