- 1 loaf ciabatta
- 1 red onion, finely sliced
- 12 cucumber, chopped
- 1 lb ripe tomatoes, chopped
- fresh basil, shredded
- 8 tablespoons olive oil
- 3 tablespoons white wine vinegar
- salt
- fresh ground black pepper
Directions

1Slice the ciabatta into 1in cubes.

2Place in a large salad bowl.

3Add the red onion, cucumber, tomatoes and basil.

4Whisk together the olive oil and wine vinegar.

5Season with salt and freshly ground pepper.

6Toss the dressing with the bread salad.

7Cover and chill for 2-3 hours before serving.
