- 2 tbsp olive oil
- 4 None small chicken breast fillets
- 4 cups baby plum tomatoes
- 1 None red bell pepper, deseeded, sliced
- 1.5 oz pimento-stuffed olives
- 1/2 None lemon, juiced

1Preheat oven to 350°F.

2Heat 1 tbsp olive oil in a frying pan. Season chicken then saute for 2-3 mins per side, until golden. Transfer to a baking dish.

3Combine tomatoes, pepper, olives, lemon juice and 1 tbsp olive oil. Add to pan and saute for 2-3 mins. Add to chicken and toss to combine. Season. Bake for 15-20 mins, until chicken is cooked through.
