  • 13 cup extra virgin olive oil
  • 14 cup red wine vinegar
  • 1 garlic clove, minced
  • 1 teaspoon dried Italian seasoning
  • 14 teaspoon salt
  • 14 teaspoon fresh ground pepper
  • 6 ounces romaine lettuce or 6 ounces mixed salad greens, torn into bite-sized pieces
  • 1 cup cucumber, sliced
  • 12 cup feta cheese, crumbled
  • 12 cup kalamata olive, pitted
  • 12 cup roasted red pepper, sliced
  • 1 cup red onion, thin sliced

Directions

    In a large bowl, combine lettuce, cucumber, olives, red peppers, and onion.

    In a medium bowl, whisk together the olive oil, vinegar, garlic, italian seasonings, salt and pepper.

    Pour dressing over lettuce mixture and toss to combine.
