- 1 lb dried cannellini beans
- 3 garlic cloves
- 1 onion, quartered
- 2 bay leaves
- 13 cup olive oil
- 2 tablespoons fresh lemon juice
- 12 cup chopped flat leaf parsley
- salt and pepper, to taste
Directions

1Soak beans overnight in cold water to cover.

2Drain; place in Dutch oven with garlic, onion, bay leaves and water to cover by 2 inches.

3Bring to a boil; reduce heat.

4Simmer covered 30-45 minutes, or until tender.

5Drain; discard garlic, onion and bay leaves.

6Toss with olive oil, lemon juice, parsley, salt and pepper.
