Twice Baked Potatoes

  • 10 medium size potatoes
  • 8 oz. sour cream
  • 1 1/2 c. Cheddar cheese
  • 2 Tbsp. margarine
  • bread crumbs
  • salt
  • pepper
  • parsley flakes
  • 1/4 c. milk

Directions

    Bake potatoes in oven at 350° for 30 minutes or until done. Cut circle in top of all potatoes.

    Peel off top.

    Scoop out potatoes.

    Mix in large bowl with electric beater the potatoes, sour cream, margarine, salt, pepper and parsley flakes to taste. Add milk.

    Mixture should look like mashed potatoes.

    Scoop potato mixture into the potato skins.

    Top with cheese.

    Sprinkle with bread crumbs.

    Bake until warm and slightly browned at 325°.
