- 1/2 lb. (2 c.) Swiss cheese, grated
- 1/2 c. grated Parmesan cheese
- 1/2 c. butter, at room temperature
- 3/4 c. all-purpose flour
- 3/4 tsp. salt
- 1/8 tsp. cayenne pepper
- 1/8 tsp. nutmeg
- 1 egg
- paprika
Directions

1Knead together in bowl 1 1/2 cups Swiss cheese and next 6 ingredients.

2Form into ball and chill 15 minutes.

3Divide dough in 6 equal pieces.

4Shape each piece into rope 6-inches long.

5Put ropes parallel to each other and cut ropes in 1/2-inch pieces. Shape each piece into a ball and flatten into a circle about 1/4-inch thick.

6Arrange on baking sheet, leaving 2 inch space between.

7Brush with egg beaten with 1 teaspoon water.

8Sprinkle each with a little of the remaining Swiss cheese.

9Bake in hot oven (425°) for 10 minutes, or until puffed and lightly browned.

10Cool on rack.

11Sprinkle with paprika and store in airtight container. Makes about 6 dozen.
