- 1/2 c. butter
- 1/4 c. chopped green pepper
- 1/3 c. chopped onion
- 1 (17 oz.) can creamed corn
- 1 (17 oz.) can whole kernel corn, undrained
- 3 eggs, well beaten
- 1 (8 1/2 oz.) pkg. corn muffin mix
- 4 oz. (1 c.) shredded Cheddar cheese
Directions

1Saute green pepper and onion until crisp-tender.

2Combine cream-style corn and whole kernel corn, eggs, and corn muffin mix; blend well.

3Add onion mixture and mix well.

4Pour into 2-quart greased casserole dish.

5Sprinkle with Cheddar cheese.

6Bake at 350° for 55 to 65 minutes or until firm and set.

7Makes 12 half-cup servings.
