  • 1/2 c. margarine
  • 3/4 c. chopped green pepper
  • 1/3 c. chopped onion
  • 17 oz. can cream-style corn
  • 17 oz. can corn, undrained
  • 3 eggs, well beaten
  • 8 1/2 oz. pkg. corn muffin mix
  • 1 c. shredded Cheddar cheese

Directions

    Melt margarine and saute onion and green pepper. Combine remaining ingredients except cheese; blend well. Add onion and green pepper.

    Pour into 2-quart casserole. Sprinkle with cheese. Bake at 350° for 55 to 65 minutes until firm and set.
