- 1/2 c. margarine
- 3/4 c. chopped green pepper
- 1/3 c. chopped onion
- 17 oz. can cream-style corn
- 17 oz. can corn, undrained
- 3 eggs, well beaten
- 8 1/2 oz. pkg. corn muffin mix
- 1 c. shredded Cheddar cheese
Directions

1Melt margarine and saute onion and green pepper. Combine remaining ingredients except cheese; blend well. Add onion and green pepper.

2Pour into 2-quart casserole. Sprinkle with cheese. Bake at 350° for 55 to 65 minutes until firm and set.
