- 3 c. cake flour
- 1 3/4 c. sugar
- 1 1/4 c. milk
- 1/2 c. shortening
- 2 eggs
- 2 1/2 tsp. double-action baking powder
- 1 tsp. salt
- 1 1/2 tsp. vanilla extract
Directions

1Preheat oven to 350°.

2Grease and flour two 9-inch round cake pans or one 13 x 9-inch baking pan.

3Into large bowl measure all ingredients; with mixer at low speed, beat until well mixed, constantly scraping bowl with rubber spatula.

4Beat at medium speed 4 minutes, occasionally scraping bowl.

5Pour batter into pans and bake round layers 30 to 35 minutes, until toothpick inserted in center comes out clean.

6Cool cake in pans on wire racks 10 minutes; remove from pans and cool completely on wire racks.

7Makes 2 layers or 1 cake.
