  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme, crumbled
  • 4 mild fish fillets, such as orange roughy (about 4 ounces each), rinsed and patted dry

    Heavily spray a 13 x 9 x 2-inch glass baking dish with olive oil spray.

    In a small bowl, stir together the remaining ingredients except the fish.

    Sprinkle on both sides of the fish, pressing gently so the mixture adheres.

    Put the fish in a single layer in the baking dish.

    Bake for 10 to 12 minutes, or until the fish flakes easily when tested with a fork.
