- 1 lb ricotta cheese
- 8 eggs
- 1 Salt and pepper
- 1/2 lb phyllo sheets
- 1/2 lb butter, melted
- 1/4 cup grated cheese
Directions

1Beat four whole eggs and four egg folks only.

2Beat until light and creamy; fold into crumbled feta cheese, ricotta, and grated cheese

3Season to taste

4Place eight buttered pastry sheets in a greased pan and then pour cheese mixture

5Cover with eight additional pastry sheets, brushing each with melted butter, fold edges to retain mixture and the whole pie with melted butter

6Bake at 350* for 45 min

7Cut on to squares and serve warm
