  • Greek Yogurt
  • cucumber
  • salt
  • lemon
  • dill
  • garlic

Directions

    Slice large cucumber lengthwise and remove seeds using a spoon.

    Slice cucumber in thin slices, salt and let sit for about an hour to let the cucumber sweat its water.

    Strain cucumber and rinse.

    In a food processor, add 2 large cloves of garlic, 7 gms fresh dill leaves (can also use dried), the juice of one lemon, 1 tsp of freshly ground (or whole) pepper and the strained cucumber. Process until the mixture is smooth.

    Blend the above mixture into 2 cups Greek yogurt and refrigerate for at least an hour. (You can further strain in a sieve to make thicker)

    Serve on pita with chicken or lamb for a gyro or use as a garnish on pita bread.
