- 1 cucumber
- 3 green onions
- 2 cloves garlic
- 4 ounces feta cheese
- 2 cups sour cream
- Salt and pepper
- 6 pieces pita bread
Directions

1Peel the cucumber, cut in half lengthwise, and scrape out the seeds with a spoon.

2Cut each piece in half again lengthwise and cut into very thin slices.

3If you have time, place the cucumber in a colander, sprinkle with salt, and let stand in the sink or over a bowl for 2 to 3 hours.

4(The salt will leech the water from the cucumbers so the sauce wont get runny.

5If you need to skip this step because you dont have time, decrease the sour cream by 1/2 cup.)

6Trim the green onions, discarding the ends, and cut all of the white and about 1 inch of the green parts into thin slices.

7Peel the garlic and finely chop.

8Place the feta cheese and sour cream in a bowl and stir until combined.

9Stir in the cucumber, onions, and garlic and season with salt and pepper.

10Cut each piece of pita bread into 8 wedges and serve on a large plate with the sauce on the side.
