Ingredients: 34 cup vegetable oil; 2 cups sugar; 2 eggs; 1 teaspoon vanilla; 2 cups flour; 2 teaspoons cinnamon; 1 teaspoon nutmeg; 1 teaspoon baking soda; 12 teaspoon salt; 4 cups apples, peeled, cored and diced; 12 cup walnuts, chopped (or pecans)

2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
2 teaspoons cinnamon
1 teaspoon nutmeg
1 teaspoon baking soda
12 teaspoon salt
4 cups apples, peeled, cored and diced
12 cup walnuts, chopped (or pecans)

Directions

Cream sugar, eggs and oil.

Add dry ingredients and mix well.

Add finely diced, apples and nuts (optional) and mix in by hand.

Pour cake batter in a well greased loaf pan or preferrably a greased bundt pan.

Bake at 350F for 45 minutes or until knife inserted into center comes out clean.

Serve with ice cream if desired.
